13-Minute Meals: Jamaican shrimp and rice

2 cups veggie stock


½ cup red onion


½ cup green onion


1 cup chopped orange or red pepper


1 teaspoon all spice


¼ teaspoon cayenne pepper


1 cup black beans


Zest from one orange


Juice from orange


Salt and Pepper


24 Shrimp


Toss with ½ teaspoon all spice


¼ cup butter


Toast rice in skillet for 2 to 3 minutes.  Add veggie stock, green onion tops, red onion, orange pepper, zest and juice from one orange and cayenne and cover.  Simmer for 5-7 minutes and add black beans.  In a separate pan melt butter, toss shrimp with all spice and sauté.  Cook shrimp for until pink.  Combine with rice or top rice whichever you prefer.
